They are different languages for labour. You must convert both to rupees on same grams and same gold rate day. Then compare.

Percent side quick

Gold value first. Percent times that value. Heavy gold, percent making becomes big money even if percent looks small. Light fancy piece, percent can still hurt if high.

Per gram side quick

Grams times making per gram. Almost ignores gold rate for the making line. Rate still matters for metal line. Making line scales with weight only in this method.

Worked example from my notebook

Rate 58,000 per 10g, piece 10 gram, gold value 58,000. Percent shop 14 percent making = 8,120. Per gram shop 850 × 10 = 8,500. So percent shop cheaper on making that day for this weight. Next month if rate jumps to 70,000, 14 percent making becomes 9,800. Per gram shop still 8,500 if they keep 850. Now per gram shop looks better on making. See, comparison flips when rate moves. What shops choose why

Fancy lightweight earrings, per gram making can be high because work heavy, gold little. Percent on small gold value might underpay artisan in their view, so they pick per gram or flat. Plain heavy kada, percent common. Ask method before bargaining.

Mistakes buyers do

Worked second example lighter piece

Piece 3 gram, rate 58,000 per 10g, gold value 17,400. Percent 14 percent making = 2,436. Per gram 850 × 3 = 2,550. Close. Now if per gram shop quotes 1500 per gram on fancy light earrings, making 4,500. Percent shop at 14 stays 2,436. Big gap. Fancy work may justify, or not, your call after seeing finish.
